Ohhhhh My God!!!!

Homemade Samoas
Homemade Samoas (a.k.a. Caramel de-Lites)
Cookies
1 cup butter, soft
1/2 cup sugar
2 cups all purpose flour
1/4 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla extract
up to 2 tbsp milk
Preheat oven to 350F.
In a large mixing bowl, cream together butter and sugar. Mix in flour, baking powder and salt at a low speed, followed by the vanilla and milk, adding in the milk as needed to make the dough come together without being sticky (it’s possible you might not need to add milk at all). The dough should come together into a soft, not-too-sticky ball. Add in a bit of extra flour if your dough is very sticky.
Roll the dough (working in two or three batches) out between pieces of wax paper to about 1/4-inch thickness (or slightly less) and use a 1 1/2-inch cookie cutter to make rounds. Place on a parchment lined baking sheet and use a knife, or the end of a wide straw, to cut a smaller center hole. Repeat with remaining dough. Alternatively, use scant tablespoons of dough and press into an even layer in a mini donut pan to form the rounds.
Bake cookies for 10-12 minutes, until bottoms are lightly browned and cookies are set. If using a mini donut pan, bake for only about 10 minutes, until edges are light gold.
Cool for a few minutes on the baking sheet then transfer to a wire rack to cool completely.
Topping
3 cups shredded coconut (sweetened or unsweetened)
12-oz good-quality chewy caramels
1/4 tsp salt
3 tbsp milk
8 oz. dark or semisweet chocolate (chocolate chips are ok)
Preheat oven to 300. Spread coconut evenly on a parchment-lined baking sheet (preferably one with sides) and toast 20 minutes, stirring every 5 minutes, until coconut is golden. Cool on baking sheet, stirring occasionally. Set aside.
Unwrap the caramels and place in a large microwave-safe bowl with milk and salt. Cook on high for 3-4 minutes, stopping to stir a few times to help the caramel melt. When smooth, fold in toasted coconut with a spatula.
Using the spatula or a small offset spatula, spread topping on cooled cookies, using about 2-3 tsp per cookie. Reheat caramel for a few seconds in the microwave if it gets too firm to work with.
While topping sets up, melt chocolate in a small bowl. Heat on high in the microwave in 45 second intervals, stirring thoroughly to prevent scorching. Dip the base of each cookie into the chocolate and place on a clean piece of parchment paper. Transfer all remaining chocolate (or melt a bit of additional chocolate, if necessary) into a piping bag or a ziplock bag with the corner snipped off and drizzle finished cookies with chocolate.
Let chocolate set completely before storing in an airtight container.
Makes about 3 1/2-4 dozen cookies.
Note: These cookies are fairly time consuming to make, but if you take your time and have fun with them, the results will be worth it.  That said, if you want something a little bit quicker, try baking a batch of Samoas Bars instead, which require no rolling and cutting of the dough!

Strawberry Rhubarb Spice Jam



(I don't really measure anything....so these are a close estimate)
3 C whole strawberries
3 C Rhubarb chopped
1 C Brown Sugar
1 C Organic Cane sugar
2T pumpkin pie spice
1t cloves
1T vanilla extract

Cook in large pot until rhubarb is soft ....cool ....puree....
.bring to a boil put in 1 pectin box (rapid boil 4 min )
1/2 inch head space (waterbath can for 10 min)

Super good on toast, icecream, brie cheese ect......

Vacation day

Today my sis and i went to Hood river (super cute) We had Breakfast at a place called Bette's and the sign said "the friendliest staff in town" but i beg to differ . We did part of the fruit loop (26 farms) So pretty!!! Heather had never been to Multnomah Falls so we had coffee there and button ( my dog) growled at everyone. Rad

Beet Brownies !!!! Yummy

These are so good !
1/4 C oil
1/2 C Beet puree
3/4 C milk
1/2 C Coffee
1 C Flour
1/2 C Whole wheat flour
1/2 C Cocoa powder
1 C Brown sugar
1 1/2 t baking soda
1 t salt
1/2 C chopped Walnuts
1/2 C Chocolate chips


Add beet, oil, Coffee , Milk
. stir into dry ingredients
,mix as little as possible
. add  nuts and chocolate chips
.grease cake pan
.bake at 350 for 25 mins (may take a bit longer)

These were our birds we watched them make the nest , sit on the eggs & right as the babies were learning how to fly .....We watched from our bedroom window a bigger bird come along and eat all the babies ( we were pounding on the window and couldn't make it outside fast enough to save them .....so sad

Canning

Back to work tomorrow and i canned 3 different things this week !! I made a Pear/Pineapple honey, Pickled Red onions and Pickled Garlic........busy.busy.busy.

Pear/ Pineapple Honey
3 lbs Pears (peeled,cored and chopped)
5 1/2 Cups Sugar
1 8oz can crushed Pineapple in juice
1Tablespoon Lemon juice

Bring to a boil
cook on medium for 3hrs
1/2 inch room for head space
Process for 10 min in water bath
Pickled Garlic

1/2 jar fill with garlic cloves
sliced  red peppers
red onions
1/2 jar fill with distilled vinegar 1/4 water
30 peppercorns
3 dried chilies
2 bay leaves
few sprigs of rosemary
1/2 inch from top
water bath can for 10 min
Pickled Red Onions
use stainless steel pot & wooden spoon ( if you use something else the onions will come out blue or purple)
YOU CAN SERVE THESE WITH OLIVE OIL AND GOAT CHEESE OR A SHARP CHEDDAR
4 Cups  distilled vinegar
2 Cups sugar
1 teasp cinnamon
1 teas cloves


1 teas allspice
2 dried chilies
2 bay leaves
20 peppercorns
1 1/2 lbs Red Onions

Combine all but onions in large stainless steel pot boil 
slice onions 3/8 inch (Separate  into rings)
Boil 1/3 of onions at a time for 30 seconds (push down with spoon)
remove onions put on a plate (3 separate plates) and cool down 100percent
do the same 2 more times
store in brine ( let it pickle in jar for 2 weeks)

Tulips

On Friday at work i learned all about "vagazzling" and it is putting  jems on your ...well you get it! (It's in the name) I guess gay dudes loves it....word on the street is. My family went to the coast all weekend and took Ruby !!! Jason took me on a Date to the Living Room Theater ( you sit on chairs or couches and eat dinner while watching a movie ) Alice in Wonderland was alot better than i had given Disney credit for. We went to the tulip festival in woodburn today and we rode a cart out to the fields and Jason is holding Ruby and says " Wow i almost pulled a Michael Jackson " I was laughing so hard because he was talking about hanging her over the edge and i reminded him what most people think of when someone is "pulling a Michael Jackson" is not that . People are to uptight haha ...Oh and Olivia now owns my Toyota Corolla ....i am sad for me and happy for her.....

Today was my mom's B-day...We had Mexican food on the water in the sun .Beautiful.
I  made the best Beet salad (It looks gross but taste's amazing)
 1 1/2 Lbs Beets
 2 T Olive Oil
1/2 t salt
1/4 t pepper
DRESSING
2 T Olive Oil
1/4  C chopped walnuts
1/4 C red onion (thinly sliced)
2T chopped fresh basil
1T Balsamic
3 oz Gorgonzola Cheese
1/4 C light or heavy cream

+ Heat oil in skillet brown walnuts (3 min)
+ Transfer to a bowl to cool
+When cool add onion, basil, salt
+ Place cheese and cream in blende
+Transfer to bowl with walnuts
+Combine beets
+ Serve over pasta or Greens

Went to vet today had hollywood (my cat ) and button (our dog ). Hollywood right as we got in the front door let our a huge meow and peed all over me and shit 3 times on the floor! awesome! I like a big grand entrance places i go! Had amazing indian food with an old friend (at home) then ate my strawberry rhubarb pie!!
