One of the Best Recipes i have made in along time! from Americas Test Kitchen
1 1/4 Cups water
1 Cup couscous
salt and pepper
1 Cup Greek Yogurt
1 Beet (grated on large holes of box grater)1/2 cup
2 Garlic Cloves minced
2 Tablespoons fresh mint & dill( 2 T of each)
1 cup frozen peas , thawed
1 large egg plus egg yolk
2 Tablespoon Flour
1/4 Cup Olive Oil
Bring water to boil , stir in couscous and 1 t salt . remove from heat and cover 5 min
.mix yogurt, beet,garlic, 1 T mint & 1T dill mix in bowl ....set aside
. mash peas roughly in bowl mix in rest of mint and dill, egg & yolk couscous and flour
.heat oil in pan and pack 1/3 cup of mixture and put in frying pan cook on each side 3-5 min until brown
.pour beet yogurt over each patty and its summer on your plate
